Story

In the lush highlands of Rio Verde, coffee grows in harmony with nature. The farm’s clay-rich soil, teeming with minerals and nourished by diverse flora and fauna, creates a fertile foundation for exceptional crops. Situated at high altitudes with plentiful water and a mild microclimate, Rio Verde is an ideal home for premium coffee varieties like Yellow Bourbon, Acaia, and Mundo Novo. The landscape is divided into 69 unique plots, or “glebes,” each with its own microclimate. These are harvested and processed individually, with 32 glebes lying above 1,000 meters—prime territory for quality-focused cultivation.

This 100% Yellow Bourbon lot is a product of meticulous care, blended by skilled Q graders to craft a distinct flavor profile. At Ipanema’s advanced mills, coffee is selectively harvested, dried naturally on raised beds or patios for up to nine days, or gently finished in mechanical driers. Afterward, beans rest for at least 60 days in wooden bins to stabilize moisture and enhance taste. Eucalyptus trees grown on the farm supply natural fuel for drying, reflecting Ipanema’s commitment to sustainability. As one of the region’s largest employers, the farm supports over 2,000 seasonal workers and 300 permanent staff, offering food, healthcare, and housing—ensuring both people and coffee thrive together.
