This lot features Elite Bourbon, a locally developed varietal known for producing exceptional quality beans. During harvest, only perfectly ripe cherries are handpicked, sorted for quality, and fermented for 192 hours with mountain microorganisms. After fermentation, the coffee is sun-dried on raised beds for 25-30 days, ensuring an even, mould-free drying process.
