Grown using the delicate Criollo varietal, this lot preserves Mexico’s rich coffee heritage while delivering a complex, vibrant cup. Although Criollo has been largely replaced by more resilient varieties due to its low yield and vulnerability to Coffee Leaf Rust, dedicated farmers in the Santuario Project continue to cultivate it at higher altitudes, ensuring a premium, flavorful product. The Santuario Project, initiated in 2017, has brought together innovative processing techniques and state-of-the-art facilities to produce high-quality coffees like this one. With a focus on sustainability and quality, cherries are carefully harvested, and each batch undergoes meticulous processing, including Brix measurements, fermentation, sun drying, and careful storage. This commitment to excellence is evident in every cup, showcasing the unique flavors of the Orizaba region.
